The Australian White sheep breed is new to the United States. The meat of the Australian White sheep is considered to be the "Wagyu" of lamb meat. The quality of this meat ranks very high amongst chefs worldwide. It has a favorable lean-to-fat ratio, resulting in exceptionally marbled meat. Their meat is distinguished by the quality of the fat, known to have a lower melting point. The combination of Australian White and Katahdin Sheep supports our mission to provide high-quality, responsibly raised lamb while maintaining a healthy farm ecosystem.
